Our trees are carefully tended to, pruned and olives are handpicked, delivering the very best fresh olives to the mill within hours of harvest.

Olive Grove

Our Olive Grove consists of four hundred Coriggiola olive trees, a Tuscan variety well suited to the region.

Vineyard

The Pialligo Estate vineyard is situated along the ridge above the fertile river flats. The soil is characteristically sandy clay. This yellow coloured soil, known as a “Kandosol”, is well suited to crops that require good drainage.

The vines are in their second decade of producing amazing fruit that we craft into award winning wines of wonderful complexity.

Our seasonal plantings are planned in consultation with our culinary team to serve our seasonal menus. Vegetables, herbs and flowers are cultivated, picked and delivered to our chefs daily. Fresh, flavoursome and healthy produce – guaranteed when you grow your own.
